DIY: surprise muffins



While everyone else is stocking up on their favorite Valentine candy, I'm over here having a love affair with anything filled with jam. This includes but is not limited to: donuts, cookies, jammie dodgers, and muffins. If it has jam in the center, I'M YOUR GIRL. Just hand me a cardboard sign that reads, 'will work for jam-filled goodness'.

Anyway, I couldn't sleep last night so I emailed my grandmother at three in the morning to ask for her surprise muffin recipe. Technically, I've only ever tasted this recipe once, like a year or two ago, but man, it stuck with me. Lily can also attest that these are the best things since sliced bananas - she ate three. 

Surprise Muffins:

1 egg
1/2 cup milk
1/4 cup canola oil
2 tsp baking powder
1/2 tsp salt
1/2 cup sugar
1 and 1/2 cups flour

About 1/2 cup jam or jelly

Directions: Preheat oven to 400˚. Grease or line twelve muffin cups. Beat egg with fork. Mix in oil and milk. Add dry ingredients and stir in just until flour is moistened. Batter should be lumpy. Fill muffin cup half full of batter. Drop scant teaspoonful of jelly or jam in center, add more batter on top to make the muffin cup 2/3 full. Bake 20-25 minutes or until golden brown.
