Whole Wheat Blueberry Pancakes

Whole wheat blueberry pancakes
(to make the day after eating all of that sugar from the king cake)

1 1/2 cups whole wheat flour
2 T baking powder
1 egg
1 cup milk
1/2 t salt
1 T sugar
1/2 cup fresh or frozen blueberries

Sift together flour and baking powder, set aside. Beat together the egg, milk, sugar, and salt in a large mixing bowl. Stir in flour until just moistened. Stir in blueberries. Preheat skillet over medium heat and spray with cooking spray. Use a 1/4 c measuring cup to scoop batter into skillet. Cook until bubbly, and flip.
